Almond All Spice Cookies
Imagine your house filled with an all spice aroma all of a sudden. What's cooking in the oven?
These cookies create this exact magic, to spread instant happiness not only with their delicate taste but also with the great smell or ginger, nutmeg and other spices.
We prepared these cookies as part of the Christmas cooking I held in Kuala Lumpur, and it was a real fun to bake them together with the group.
So get your favourite cookie cutters ready and enjoy the baking time! If you like this shape you can find them in Ikea during the winter Holiday season.
Ingredients
Gluten-free Flour 190 gr
Xanthan gum 4 gr
Baking powder 1 gr
Spices: 1 tsp ground cinnamon, 1 tsp ground ginger, 1/2 tsp ground nutmeg, 1/2 ground cardamom, 1/2 ground cloves
Salted butter 110 gr
Raw Cane Sugar 100 gr
Almond extract 4 drops
Rum (Optional) 1 tbsp
Egg white 1/2 egg (lightly beaten)
Flaked almonds as needed (about 50 gr)
Making the Cookies
Mix the flours in a bowl together with the xanthan gum and baking powder.
Whisk the softened butter with the sugar until it becomes creamy. Use an electric mixer for a quicker process. Add the spices and almond drops to the batter and whisk for a few more seconds.
Incorporate the dry ingredients to the mix and, at last, add the rum. (Skip the rum if you prefer to avoid alcohol.)
Create a ball with the dough, wrap in cling film and place in the fridge for 30 minutes. Preheat the oven to 180 °C.
Sprinkle a plain and clean surface with thin rice flour and place the dough on it. Roll out the dough ( 3-4 mm thick) and use your favourite stamp to create the cookies shape. Cover the surface of the cookies with almond flakes.
Place the cookies onto a tin covered in baking paper and bake for 10-12 mins until golden, then let them rest onto a cooling rack.
You can preserve the cookies in an air-tight container for at least 4 days.
